A fresh, textured palate arising from extended contact with lees while ageing in French Oak. The unclarified juice is run to these barrels along with a combination of wild and cultured yeast fermentation.
The result is an elegantly structured, complex wine, with aromas of peach/melon/citrus framed by vibrant charming natural acidity. A generous, textured palate that lingers.
Enjoy with buttery or creamy dishes, delicate fish, poultry or pork dishes. Great with soft more flavourful Bries and Camembert style cheeses.
